Chef Kait’s Weekly Fit Recipe: Protein Pancakes

Who doesn’t love pancakes?

Ok fine, I realize there are people who don’t love pancakes. I was actually more of a French Toast girl myself, until I found this recipe for protein pancakes. They taste like the ultimate carb-y “dessert for breakfast,” but there’s nothing bad about them (in fact, they’re probably healthier than the last protein bar you ate at about 25 grams of protein and less than 200 calories). There are a MILLION ways to customize them, whether you top them with fruit, nut butter, a dollop of Greek yogurt or a small drizzle of real maple syrup (from the TREE, not that fake high fructose corn syrup stuff).

Dieters, fear not: pancakes are back in your life.

Protein Pancakes:

1 scoop protein powder (of your choice)

1 egg white

½ a banana

Dash of cinnamon

Splash of milk of your choice (leave out for thick batter, or add extra to thin)

Lightly spray or coat a frying pan with coconut oil and heat to medium. Mix the batter (with a blender for best results) and pour into the pan (makes a few small pancakes). Serve and top with whatever you like – I recommend frozen berries warmed in the microwave, or spread nut butter on the pancakes and top with remaining slices of banana.

BONUS: pour the batter into a waffle maker for waffles.
